My name is Cath and I am lucky enough to live in New Zealand with my husband and two gorgeous girls, Danika & Joelle. Although I work full time, I do love to get in the kitchen and create and make things look good. (Sometimes it doesn’t always turn out that way). Being a working Mum doesn’t give me lots of time to do this so lots of short cuts are taken along the way!

Danika & Joelle made most of these beautiful cupcakes. Patience is needed as they take some take but we had fun chatting and sitting around the bench as we created them so it didn’t seem like a chore at all.
I made a vanilla cupcake as my base and used a butter cream icing (Danika chose Tutti Frutti as the flavour). You can just spread the icing on with a knife as it doesn’t need to be pretty as it will be covered in decorations. We made coloured sugar the night before and left the bags open for them to dry out overnight.
Cut mini marshmallows in half diagonally and toss them in the bag of sugar. The sugar will only stick to the sticky cut surface. Place them on an iced cupcake around the outside first and work your way in. Place the short side into the icing with the longer side pointing up and out. We used licorice allsorts to make the stamens. We separated the layers and sliced small strips. Roll them in your fingers to take off the sharp edges. Easy, simple and stunning! 🙂
